Chef David Arauz undertook a difficult task: honoring the steep tradition of Japanese itame while holding true to the ingredients and ethos of Spanish cuisine. Even for Arauz, who has cooked in some of the finest Japanese kitchens in Spain, the feat is a daunting one. But Zuara Sushi, his Michelin-starred omakase restaurant, is proof of success. Here, two menus are available for selection, both of which are superb. Arauz himself creates the meal in front of you, adding a level of personal touch to an establishment already alive with curation. When in Madrid, many make an effort to take advantage of the exquisite seafood. To skip out on Zuara Sushi would be to miss some of the best they have to offer. —Jack Sullivan
