Madrid has its fair share of rustic, suave, and authentic old-school hotspots. Sala de Despiece is something different. Here, we find a glossy and compact butcher’s shop, brightened by overhead lighting and fitted with barstools. Fish hooks are suspended from the ceiling. Of course, this combination of rugged and modern is intentional—and it works. Sala de Despiece specializes in tapas, paying homage to the traditional food of Chamberí. And among the sirloins and veal, it’s the seafood, curated by head chef Javier Bonet, that sets this place apart. Their octopus, herring, and oysters are as vibrant and distinctive as their décor. —Jack Sullivan
