Bar Cock isn’t a bougie new-world mixology bar. It sticks to the classic cocktails—gin martinis with a twist, negronis, and gimlets. It’s been open for business since 1921, and since then, it’s been a haven for patrons as diverse as Frank Sinatra and Pedro Almodóvar. Atmosphere-wise, things have stayed gloriously unchanged over the years—the booths are leather, the tables wooden, and small paintings of roosters adorn the walls. Head nearby to Toni2 piano bar after midnight for some sing-alongs, then back to Bar Cock to round out the evening with a nightcap. Like all things in Madrid, it stays open late. —Maddalena Arrivabene
