After a long, hot day in Athens, calm is essential. Few hotels in the city offer as much peace as The Dolli, which first opened last year and is housed in a renovated neoclassical mansion built by Andreas Kriezis in 1925. Its lofty ceilings, light marble details, and simple decorations create an atmosphere of discreet luxury. While the rooftop is a favorite, the hotel’s true gem is the pool overlooking the Parthenon. Sitting under a parasol at sunset is pure bliss. —Jeanne Malle
