Most indoctrinated Athenians will likely have stopped into Cookoovaya, Periklis Koskinas’s cutting-edge take on traditional Greek cuisine that’s been making delectable seafood, meats, and oven-baked pies for 10 years now, before. Not many, however, might be familiar with Hoocut, Koskinas’s souvlaki-specialized restaurant right next to Monastiraki square. Go in, order at the counter, sit on a high-topped chair, and indulge in the house-baked pita bread, which is stuffed with the perfect ratio of lamb, chicken, pork, or beef. —Elena Clavarino
