You might walk by this Soho restaurant without giving it a second glance. But peer into its nondescript window and you’ll see a sleek, wrap-around marble bar with three chefs hard at work. On any given day, they’ll probably be busy concocting exquisite tortillas (which, as any Spaniard will attest to, strike the perfect balance between thick and runny), pan con tomate, and sautéed seafood, Balearics–style. Conceived by Sam and Eddie Hart in 2014, we’d go so far as to say this is the best tapas bar in London. Take your pick of any of the red stools and sit for 30 minutes—it’s the kind of place where patrons go solo. So bring a newspaper and enjoy. —Elena Clavarino
