If Ernesto’s was chef Ryan Bartlow’s Basque love letter, Bartolo is his Madrid diary: warm, unfiltered, a little cheeky, and deeply personal. Tucked between West 4th and 12th Streets in the West Village, the Spanish restaurant channels the soulful taverna culture of Madrid with a moody, layered interior and a menu full of classics with just the right amount of New York flourish. Expect anchovies with butter, torreznos, tortilla, arroz meloso, and callos done the old way and done well. There’s flan and a cheesecake that already has a following, plus a tightly edited bar program of Spanish inspired cocktails and a sherry-soaked wine list curated by Daryl Coke. (Yes, there’s some Champagne, too—we’re still in Manhattan, after all.) The dining room is a family affair—literally. Bartlow’s wife and sister-in-law are partners, and the art on the walls comes courtesy of friends and relatives. The vibe? Soft lighting, considered design, and a kind of hushed glamour that encourages ordering one more bottle and staying too long. —Jennifer Noyes
