Fans of this restaurant know that there’s only one way to get a table here. At 12 P.M. on the dot every day, a new date with available reservations gets unlocked on their Web site. Prepare to be quick with your fingers, hit refresh, and hope for the best. There are many reasons for Trattoria Trippa’s huge popularity. First off, its vitello tonnato (veal with tuna sauce—just trust us) is to die for. At first glance, the tiled floors and yellow walls of Diego Rossi and Pietro Caroli’s famed reinterpretation of the classic trattoria will seem old-school, but when you look closer, you’ll notice it’s all curated with a modern hand.
