In the 1960s, the sole heiress to the Savoy Hotel group, Bridget Dame D’Oyly Carte, gave lush summer parties in her 90-acre estate in the Chiltern Hills. Luminaries in attendance could wander ancient woodlands, where bluebells grew in wide, wild blankets. They still grow there, though now these grounds are the site of Nomadic’s hidden woodland feasts, presented since 2018. Guests forage fields and hedgerows for local ingredients such as mushrooms, wild garlic, blackberries, and rosehip. They handpick herbal teas. A wild kitchen is fired up by found birch, beech, and juniper, and a four-course meal, prepared by a mystery chef, is served on a table carved from a fallen tree. Nomadic’s feasts, just an hour’s trip from the city, coincide with the revival of foraging in London as the sustainability practice par excellence. —Grazie Sophia Christie
