In 1948, Giuseppe Cipriani combined white peach purée with Prosecco to invent the Bellini. The 50s saw the arrival of the Spritz Veneziano, known today as the Aperol Spritz. Over the years, countless other concoctions have come out of Venice, inspired by long leisurely mornings and la dolce vita. In a festival that celebrates Venetian mastery of the cocktail, institutions around the city will deliver their most creative mixology to date. Hotel bars, cocktail bars, and historic cafés are teaming together to create newly crafted cocktail lists. And if you want to try it at home, there are themed nights and master classes with visiting bartenders from other countries. But remember: Only responsible drinking, of course. —E.C.
